Mass Mess

So once a week - (somtimes twice if im feeling crazy) I make one huge mass mess in my kitchen. I cook for the entire week!! A couple things I freeze for Thursday and Friday so that they arent totally gross. Usually Sunday - I spend all day creating my food for the week. Its a super pain - but toally worth it when I get home from work and all I have to do is heat up my grub. I also package all my food in containers so its portioned out... I tend to be a toatl fat kid if I dont. Ya know.... One large bowl of pasta in the fridge and I continue to stick my fork in it.... for hours!! Dont pretend like you never do it.... The calories dont count if we arent sitting at a table right? WRONG!! Ugh... One of the numerous lessons I learned the hard way. Story of my life.ahhh before i totally digress... I attached a picture of my fridge and meals i made this week so you can see exacly what it looks like.... Yup as anal retentive as you would think. Im almost ready to start portioning my drinks too!!



Ha the last photo is for sh*ts n giggles.. cause seriousyl thats what I look like ..... although that smile probably isnt so shiny!!!  I also started cutting up my strawberries and making small portions of them... again, cause last night i totally hooved an entire cartoon. fat kid alert!!! Suga in fruit is just as dangerous as anything else. portion control people... portion control is where its at!! Everything in moderation!!

Brownie Batter Pancake Skewers (yes they are healthy too!!)

So how sad is it that in my spare time I now scour the internet for recipes? Pinterest rocks for super cute recipes!!  If you don’t pin food, I want nothing to do with you. What else would I need the internet for? Shoes? Na. Hair…I tried to care about that, it didn’t work. Crafts? Hell to the no. Crafts are for people with time... which I have none of.

So I found this recipe for Brownie Pancakes... im drooling just saying the name. What genius thought of this... i need to hug him.

Im going to give it a try tonight... Heres what youll need if you want to try too!

Ingredients
  • For the pancakes
  • 1 banana, peeled
  • 2 egg whites
  • 1 whole egg
  • 2 tablespoons Coconut Flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon agave or raw honey (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • pinch of salt
  • For the toppings
  • handful of strawberries, diced
  • 1/4 cup Coconut Cream Concentrate or 1/4 cup homemade coconut butter
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon agave or raw honey
Instructions
  1. In a food processor or blender add your banana and pulse until completely broken down into a soupy paste.
  2. Then add your egg whites and egg and pulse again to combine.
  3. Lastly, add all of the rest of your pancake ingredients and pulse to thoroughly combine.
  4. Heat up a large skillet under medium heat, grease with a bit of coconut oil, and add your pancake batter to the hot skillet with a spoon. Make to your preference size, small for the skewers, large for big boy ones.
  5. Flip pancakes when you begin to see bubbles forming on the top surface of the pancakes. The smaller they are, the shorter amount of time they will take to cook so keep on eye on them.
  6. While your pancakes cook, mix your coconut cream concentrate, cocoa powder, and honey/agave. Place in microwave if needed to mix thoroughly into a paste.
  7. Once your pancakes are done cooking, stack one pancake, then a slice of strawberry and repeat as many times as needed, stick a toothpick through it, and pour chocolate sauce over your pancakes.
  8. Consume.
Notes
This will make 4-5 skewers with 3 pancakes per skewer, ranging from 1-1.5 inches in diameter. Definitely double or even triple the recipe if you have a large crowd!

The Healthiest Muffin Top Youll Ever See ...

Eat it for breakfast, lunch, or dinner.  It is quick prep, super easy, and packed with great things like lots of protein and veggies. WOohoo! Since we all know breakfast sets up our day...we cant skip it and waking up at 4:30am lately is ROUGH... cooking breakfast is last on the list. So try these on a sunday and stick them in the fridge. Heating up for a quick protein filled snack..

Muffin Tin Omelettes
 
Prep Time: 5 minutes
Cook Time: 20 minutes
Wait Time: 10 minutes
Total Time: 35 minutes
Ingredients
  • Egg Beaters ( use 100% Egg Whites, as they have the least ingredients)
  • various chopped vegetables ( or frozen ones!)

You can pretty much use ANYTHING you want - sometimes I use Nitrate Free Bacon - but I have to cook it first, or lean ground turkey. Again, you need to cook it first then add it!

Instructions
  1. Preheat oven to 350.
  2. GREASE THE MUFFIN TIN*** or you will be sorry! :)
  3. Combine eggs/Beat together. (Or be lazy like me and use the eggbeaters...just pour them in the tin)
  4. Pour eggs into tin leaving about 1/4 inch at the top for veggies to be added.
  5. Add in veggies, meat, cheese and anything else you heart (or stomach) desires. Feel free to fill each tin cup all the way to the top as the egg will condense as it cooks.
  6. Bake 15-20 min at 350 degrees.
  7. ONCE the oven timer BEEPS... let the muffins sit in the warm oven for another 10-15 minutes if you can. The longer you let them sit, the better! The top because caramalized and its super tasty!! :)

  8. ENJOY! Depending on your muffin tin - Seves 6-12!

Cross Fit

I'm  addicted. yup everyone who says its a cult...you're right.

First - AWESOME job to the crew for committing and sticking with it! If you're like me then you're probably STILL sore from March! If we only worked out on the days "we felt like it", I guarantee half of us would still be at Machiavelli's! :) 

Second- I have been getting bummed the scale was NOT moving...GRRRR! So I decided to take my measurements this morning and woohoo I have magically got rid of 2 INCHES !! ( I REFUSE to say losing weight, because I have NO intention of finding it again)  So take your measurements NOW and try to ignore the scale.

Finally....HIGH FIVE to all the moms and dads who are pushing thru sleep deprivation, juggling chores, dinners, diapers, carpools...and STILLL getting to class. YOU ROCK. I have decided to spell MOM and DAD like is : S E L F L E S S. ..... Good for you in taking an hour from your day to take care of your health. I swear our kids will thank us later in life when we are able to run around with our grand kids :) ((ouch I just referenced grand kids...jeez))

Go the extra mile...it's never crowded :)

Hello out thereeeee....



So, over the past few weeks I have been debating on starting a blog. I LOVE checking out other DIY pages, recipes, fitness tips, mommy advice etc... so I decided to share my plethora of knowledge with the world as well (which is usually just regurgatated info from somethingelse ;)) I LOVE craft ideas. Scrap booking, DIY projects and any creations that can basically save me a buck. I like to think im "thrifty" though, it sounds so much cooler. So for now, I dedicate my page to my thriftyness, attempting to lose this muffin top and any fun facts that I feel the world MUST know and is critical to their over all well-being.
